Cooking Red Snapper Fillets On The Grill?

How do you keep the Snapper fillets from being mushy? I cook it on a piece of foil on the grill.
That is a tough question to answer without seeing the Snapper. First thing is it could be the fish itself. How it was handled from being caught to processing can affect the texture.
Sometimes other fish are sold as "Red" Snapper. A true American Red Snapper should have a medium texture.
You might also try grilling it directly on the grill, instead of using foil.
