Cooking Shark on the grill

Hello Dear Fishmonger,
A friend gave me two thick, fresh shark steaks this morning and I am not sure how to prepare them to their maximum deliciousness. I want to grill them this afternoon, but am not sure about grill temp and what not. Any pointers?

Fresh shark steaks are one of the best fish to grill, because of their beef like texture.
I would suggest that you marinate these in some type of citrus, my favorite is a orange based marinated with a southwestern flare to it.
Orange Marinade for Fish
1/2 cup orange juice
1 tablespoon olive oil
1/4 cup fresh chopped cilantro
1 teaspoon ground oregano
1 tablespoon lime juice
1/4 teaspoon pepper
1/4 teaspoon salt
Mix all ingredients well and place shark steaks in marinade. I like to use a gallon size baggie.
Marinate for 30 minutes to 1 hour.
Remove and coat with olive oil right before you want to grill them.
Grill over a medium high heat about 5 to 6 minutes
on each side.
