Should one always remove the scales before cooking a whole fish? Is there a cooking method that's more suitable for a fish with scales intact?

You can leave the scales on the fish when cooking. Many people believe that it helps keep the fish moist. I prefer to remove the scales when cooking whole fish.

As far as a cooking method. A popular method is to roast the fish in salt. Here is a recipe for you.
