Fried Grouper Sandwich
Perfect for a lunch or a light dinner these fried Grouper sandwichs are delicious.
I toast my bread under the broil as soon as I put the last two fillets in to cook, that way I have
warm bread for these sandwiches.
You could add some mixed greens on top for some extra freshness. If you are the type that cannot
eat fish without tartar sauce, try this on your fish
Ingredients
- 4 Grouper Fillets, 6-8 oz. each
- 8 Cloves Garlic, finely chopped and minced
- 1 cup Buttermilk
- 3/4 cup Flour
- 1/2 cup Cornmeal
- 4 Tablespoons Olive Oil
- 3 Tablespoons Butter
- 1 teaspoon Cayenne Pepper, or more to taste
- 1 teaspoon Dried Thyme
- 1 teaspoon Oregano
- 1/2 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 8 Thick Slices French or Sourdough Bread
Directions
- Rinse and pat dry the Grouper fillets
- Add the buttermilk to a large shallow bowl
- In another large shallow bowl or large plate, combine the flour, cornmeal, cayenne,
thyme, oregano, salt and pepper.
- Dip Grouper fillets into the buttermilk and then coat them in the breading mixture
- Heat oil in a large, cast iron skillet to medium-high
- Add the 2 of the fillets as you down not want to cool down the oil
- Cook for about 4 to 5 minutes on each side
- Drain on a paper towel
- Toast bread slices, spread lightly with butter, then spread generously with minced garlic
