Grilled Marinated Shrimp Recipe
Plan ahead for this grilled marinated shrimp recipe, because it needs to marinate for 2 hours.
After cooking, remove the shrimp from the skewers and serve on top of pasta.
Ingredients
- 1 1/2 lbs. Jumbo Shrimp, peeled and deveined, tail-off
- 1/2 cup Olive Oil
- 3 cloves of garlic, minced
- 1 Tablespoon Tomato Paste
- 2 Tablespoon Red Wine Vinegar
- 2 Tablespoon Fresh Basil, chopped
- 1 teaspoon of salt
- 1 teaspoon Freshly-Ground Black Pepper
Directions
- If using wooden skewers, soak them for at least an hour
- Peel and devein shrimp, place shrimp in gallon size plastic bag, set in a bowl
- In a bowl add the olive oil, garlic, tomato paste, red wine vinegar, basil and salt and pepper, mix well
- Reserve a small amount of marinade for basting
- Pour the marinade into the plastic bag containing the shrimp and gently squeeze around to get the shrimp coated thoroughly
- Marinate for 2 hours in the refrigerator
- Thread the Shrimp onto a soaked wooden or metal skewer
- Insert one skewer through the Shrimp towards the tail, insert the other skewer towards the head of the shrimp
- Reserve marinade
- On a clean grill over medium high heat, grill shrimp for about 2 to 3 minutes on each side
- Brush reserved marinade over shrimp while cooking
