Grilled Marinated Shrimp Recipe

Plan ahead for this grilled marinated shrimp recipe, because it needs to marinate for 2 hours. After cooking, remove the shrimp from the skewers and serve on top of pasta.


  • 1 1/2 lbs. Jumbo Shrimp, peeled and deveined, tail-off
  • 1/2 cup Olive Oil
  • 3 cloves of garlic, minced
  • 1 Tablespoon Tomato Paste
  • 2 Tablespoon Red Wine Vinegar
  • 2 Tablespoon Fresh Basil, chopped
  • 1 teaspoon of salt
  • 1 teaspoon Freshly-Ground Black Pepper


  1. If using wooden skewers, soak them for at least an hour
  2. Peel and devein shrimp, place shrimp in gallon size plastic bag, set in a bowl
  3. In a bowl add the olive oil, garlic, tomato paste, red wine vinegar, basil and salt and pepper, mix well
  4. Reserve a small amount of marinade for basting
  5. Pour the marinade into the plastic bag containing the shrimp and gently squeeze around to get the shrimp coated thoroughly
  6. Marinate for 2 hours in the refrigerator
  7. Thread the Shrimp onto a soaked wooden or metal skewer
  8. Insert one skewer through the Shrimp towards the tail, insert the other skewer towards the head of the shrimp
  9. Reserve marinade
  10. On a clean grill over medium high heat, grill shrimp for about 2 to 3 minutes on each side
  11. Brush reserved marinade over shrimp while cooking
