Ingredients:
4 fillets orange roughy (6-8 oz each)
1 small red onion chopped
1 clove garlic (minced)
2 cups sliced mushrooms
2 medium tomatoes (diced)
salt and pepper to taste
2 tablespoons butter
2 tablespoons olive oil
1/4 cup dry white wine
Directions:
Heat a large non-stick skillet over medium-high heat
Add 2 tablespoons of olive oil
Salt and pepper the fish
Add the fish to the pan and cook till it flakes,turning once
Transfer the roughy to a shallow bake dish and keep warm in the oven
Add 2 tablespoons butter to skillet
Add onion, garlic to skillet and cooked until the onions are tender
Then add the tomatoes and mushrooms and cook another 3 to 5 minutes
Pour wine in and lid and let steam for about 5 minutes
