Sauteed Orange Roughy with Wine

Ingredients

  • 4 fillets orange roughy (6-8 oz each)
  • 1 small red onion chopped
  • 1 clove garlic (minced)
  • 2 cups sliced mushrooms
  • 2 medium tomatoes (diced)
  • salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/4 cup dry white wine

Directions

  1. Heat a large non-stick skillet over medium-high heat
  2. Add 2 tablespoons of olive oil
  3. Salt and pepper the fish
  4. Add the fish to the pan and cook till it flakes,turning once
  5. Transfer the roughy to a shallow bake dish and keep warm in the oven
  6. Add 2 tablespoons butter to skillet
  7. Add onion, garlic to skillet and cooked until the onions are tender
  8. Then add the tomatoes and mushrooms and cook another 3 to 5 minutes
  9. Pour wine in and lid and let steam for about 5 minutes
  10. Season with salt and pepper
  11. Add sauteed vegetables over fillets and serve
