Sauteed Orange Roughy with Wine

Ingredients
- 4 fillets orange roughy (6-8 oz each)
- 1 small red onion chopped
- 1 clove garlic (minced)
- 2 cups sliced mushrooms
- 2 medium tomatoes (diced)
- salt and pepper to taste
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/4 cup dry white wine
Directions
- Heat a large non-stick skillet over medium-high heat
- Add 2 tablespoons of olive oil
- Salt and pepper the fish
- Add the fish to the pan and cook till it flakes,turning once
- Transfer the roughy to a shallow bake dish and keep warm in the oven
- Add 2 tablespoons butter to skillet
- Add onion, garlic to skillet and cooked until the onions are tender
- Then add the tomatoes and mushrooms and cook another 3 to 5 minutes
- Pour wine in and lid and let steam for about 5 minutes
- Season with salt and pepper
- Add sauteed vegetables over fillets and serve
