Stir Fry Scallops


This Stir fry Scallop recipe is super easy to fix. Cook up some angel hair pasta to serve with it and you have a wonderful meal. You can use sea scallops if you want to, but I prefer the bay's.

Ingredients

  • 1 lb. Bay Scallops
  • 1 lb. Fresh Snow Peas
  • 1 lb. Fresh Sliced Mushrooms
  • 1 Small Red Bell Pepper, sliced thin
  • 1 Small Yellow Bell Pepper, sliced thin
  • 1 Small Red Onion, chopped
  • 2 Tbsp. Olive Oil
  • Marinade
  • 1 Clove Garlic, crushed
  • 4 Tbsp. Rice Vinegar
  • 2 Tbsp. Brown Sugar
  • 2 Tbsp. Soy Sauce
  • 2 Tbsp. Fresh Lemon Juice
  • 1 1/2 Tbsp. Cornstarch
  • 1/8 tsp. Ground Black Pepper

Directions


  1. Rinse Scallops and pat dry
  2. Combine marinade ingredients and mix throughly
  3. Divide mixture in half
  4. Place Scallops in marinade and let set for about 10 minutes
  5. Place vegetables in marinade and let set till after the Scallops are cooked
  6. Heat your wok or pan up with the olive oil
  7. Stir fry the scallops for about 4 to 5 minutes
  8. When cooked remove scallops and set to the side
  9. Stir fry the vegetables until they are crisp and tender
