Stir Fry Scallops
This Stir fry Scallop recipe is super easy to fix. Cook up some angel hair pasta to serve with it and you
have a wonderful meal. You can use sea scallops if you want to, but I prefer the bay's.
Ingredients
- 1 lb. Bay Scallops
- 1 lb. Fresh Snow Peas
- 1 lb. Fresh Sliced Mushrooms
- 1 Small Red Bell Pepper, sliced thin
- 1 Small Yellow Bell Pepper, sliced thin
- 1 Small Red Onion, chopped
- 2 Tbsp. Olive Oil
- Marinade
- 1 Clove Garlic, crushed
- 4 Tbsp. Rice Vinegar
- 2 Tbsp. Brown Sugar
- 2 Tbsp. Soy Sauce
- 2 Tbsp. Fresh Lemon Juice
- 1 1/2 Tbsp. Cornstarch
- 1/8 tsp. Ground Black Pepper
Directions
- Rinse Scallops and pat dry
- Combine marinade ingredients and mix throughly
- Divide mixture in half
- Place Scallops in marinade and let set for about 10 minutes
- Place vegetables in marinade and let set till after the Scallops are cooked
- Heat your wok or pan up with the olive oil
- Stir fry the scallops for about 4 to 5 minutes
- When cooked remove scallops and set to the side
- Stir fry the vegetables until they are crisp and tender
