Storing Red Snapper

I bought 5 red snappers yesterday afternoon. I will be serving them tomorrow eve. (Fri). How do I store them until I bake them in Veracruzana sauce tomorrow? Thank you.

Answer

The best way to store whole fish is on ice and in the refrigerator. Place them in a container that will let the melting ice drain off the fish. You don't want your fish sitting in water.

Use lots of ice.

If gutted make sure to place ice inside the cavity.
