It would depend on the fish. Safety? Well a lot of fish is eaten raw so worrying about a safe temp shouldn't be much of a concern. Find a supplier who is well known and has good reviews of their product. You can also check with your local health department about suppliers and markets. Learn how to handle and store fish properly. Salmon, if cooked to 140 will be way over cooked. Research several recipes and articles on cooking and handling of your ingredients and you will have a safe and appetizing meal.
