Different Ways to Cook Shrimp

Continuing from 5 easy ways for cooking shrimp, here are some more ways to cook shrimp.




Blanched



The main purpose for blanching shrimp is for Sushi. Use 4 quarts of water for each pound of shrimp, in a large pot bring the water to a full boil. Cook large shrimp (31 to 35 per pound) for 1 minute, small shrimp will only need to be in about 15 seconds.

Remove immediately and put in ice water to stop the cooking. Stir to make sure they all get cooled down.

When using for sushi you need the freshest shrimp you can get, frozen shrimp is not suggested.



Ceviche

Ceviche is when you use a citrus juice to cook your shrimp. Lemon or lime juice is mainly used for this process. Figure about 1/4 to 1/2 cup per pound of shrimp.

Depending on how you like your Ceviche will determine the amount of marinating time. Marinate your shrimp in a glass or stainless steel dish, between 1 hour to 24 hours, stir occasionally.

Grilled Shrimp

You can either grill shrimp in the shell or peel and devein them. Make sure to rinse the shrimp and pat dry. Brush your shrimp with a oil or butter and place on the grill. The cooking time can vary when grilling due to the exact heat of your grill.

A medium to medium high heat works good. An approximate cooking time for a large shrimp is 2 minutes per side. You will want the shrimp to opaque and not to firm, as the shrimp will continue to cook when you remove them from the grill.

Tip: Skewers are the easiest way to cook shrimp on the grill. If using wood type skewers make sure to soak them in water before , so they will not catch on fire. You can also use stainless steel skewers.

If you are cooking small shrimp, I would suggest you put them in some type of baskets that you can use on the grill.

If grilling a peeled and deveined with tail on, put a little piece of tin foil on the tail so it won't burn.

Tempura Battered Shrimp

Tempura fried shrimp will hold in the oven( 200 degrees) until you are ready to serve them, where fried shrimp needs to be served right away.

Tempura batter is made with a mix of rice flour and baking powder, egg and ice water. A deep fryer works best, although you can do them in a pan. Dip the shrimp in the tempura batter and drop in the fryer, cook till golden brown.

At 350 degrees you would cook them 2 to 3 minutes. A slotted stainless steel spoon works great for getting the shrimp from the fryer to a wired racked pan. The wired rack pan lets air flow under the shrimp so they don't get soggy on one side if you are holding them in the oven.
